We are using VMware quite a lot, so here are our own snippets of things we no more have to recall

Install VMware-tools in Ubuntu Server Guest

This approach will always work, for VMware Workstation or ESX but for ESX you could also follow this approach

Select "Install VMWare-Tools"
In the VM type execute the following commands:

sudo apt-get update
sudo apt-get upgrade
sudo apt-get install build-essential linux-headers-$(uname -r)
sudo mkdir /media/cdrom
sudo mount /dev/cdrom /media/cdrom
cp /media/cdrom/VMware*.tar.gz /tmp
sudo umount /media/cdrom
cd /tmp
tar xzvf VMware*.gz
cd vmware-tools-distrib/
sudo ./vmware-install.pl

When the installation scripts promps for answers, just hit Enter since defaults are OK.

sudo mkdir /media/cdrom

sudo apt-get update &&  ( sudo apt-get upgrade && sudo apt-get install build-essential linux-headers-$(uname -r) &&  sudo mount /dev/cdrom /media/cdrom && cp /media/cdrom/VMware*.tar.gz /tmp && sudo umount /media/cdrom && cd /tmp && tar xzvf VMware*.gz && cd vmware-tools-distrib && sudo ./vmware-install.pl )
